No Bake Salted Caramel Bites

No bake salted caramel bites, these are seriously good. No bake means just that, not baking required. Just mix the ingredients together, roll into balls and chill. Easy as.

What's cool about this recipe is you can change it a lot. Add some sugar-free choc chips or leave out the dates. Also, using different flavored protein powders like vanilla and combining more cinnamon and adding ginger would be like little ginger balls. How good would that be???

Ingredients

1/2 cups gluten-free oat flour (Paleo version- Sub 1/2 cup coconut flour)

1/4 cup coconut flour (Can sub for almond flour or more oat flour)

4 Scoop protein powder (I used MusclePharm Chocolate)

1 tsp cinnamon

1/4 cup granulated sweetener of choice (I used Natvia Stevia)

230ml pics peanut butter (can sub for other nut butter)

230ml Queen maple syrup (can sub for brown rice syrup or honey if not paleo or strictly vegan)

15 finely chopped dates (optional)

1 T + dairy free milk of choice

1/4 tsp coarse sea salt (add more to taste)

Coating

1 T cinnamon

1 T granulated sweetener of choice (I used Natvia Stevia)

Instructions

In a large mixing bowl, combine the flours, sweetener, cinnamon, protein powder and dates if using them and mix very well.

In a microwave safe bowl or stovetop, melt your nut butter with your maple syrup until combined, add coarse sea salt to taste. Pour the wet mixture into the dry mixture and mix very well.

If batter is crumbly, add dairy free milk one tablespoon at a time until a thick, formable batter is present. Using your hands, form into small balls and set aside.

In a small bowl, combine the cinnamon and sweetener and mix well. Gently roll each ball in it and refrigerate for 20 minutes, or until firm.

Enjoy.
