Low-Carb Hummus with Low-Carb Nacho's
Who loves Nacho's and Hummus? I sure do but when sticking to your macro's they are just pipe dreams. But now you can have both while sticking to a healthy low-carb diet. Thanks to The Protein Bread company and this awesome Cauliflower hummus recipe.
Low-Carb Hummus Recipe:
Ingredients: 1 head of cauliflower, cut into florets 1/4 c. olive oil, divided kosher salt Freshly ground black pepper 1/4 c. tahini (nut butter, I used Pics Smooth Peanut Butter) 2 tbsp. lemon juice 1 tbsp. Queen Sugar-free maple syrup 1 clove garlic, minced 1 tbsp. chopped parsley Directions Preheat oven to 160c. On a large baking sheet, toss cauliflower with oil and season with salt and pepper. Bake for 20 to 25 minutes, until the cauliflower is very tender. Let cool slightly. . Combine roasted cauliflower, peanut butter, lemon juice, maple syrup, and garlic in a large food processor fitted with a steel blade attachment. Process until almost smooth. Check for seasoning then season to taste with salt and pepper. Gradually add oil, a tablespoon at a time, until you reach the desired consistency. . Transfer to a shallow serving bowl. Sprinkle with parsley .
Protein Nacho's
Ingredients
Level 3/4 cup (80 g) of Protein Pizza Mix
3 large eggs or 180 g of egg white
1/4 cup of water (60 ml)
Salt
Spices to taste (your choice)
2 tablespoons of olive oil (optional)
Directions This is a batter not a dough. It is meant to be liquid at first but will crisp up during baking.
For the ultimate crispy pizza base, add the olive oil.
Prepare Preheat a fan forced oven to 180°C and line a 30 cm tray with baking paper (not grease-proof paper).
Mix Place the contents of this pack into a large mixing bowl. Add all ingredients and whisk to combine into a smooth liquid batter.
Pour Pour the batter into the center of the lined tray. Use the back of a spoon to spread it evenly to the edges. For nacho's make a square or rectangle base.
Bake the Base Place in a pre-heated oven and bake for 15-20 minutes (Flip half-way) or until golden brown. Remove from the oven.
Cut your pizza base into triangles and season with salt and spices.
Storage Baked, un-topped pizza must be stored in the fridge (1-4°C), for up to 5 days or the freezer (-18°C) for up to 3 months.
