Sugar-Free Rocky Road Slice

This delicious Rocky Road recipe is easy to make and easy to eat. So watch out because the more you eat the more you toot.

No baking required for this recipe but I would recommend tempering your chocolate so it stays hard at room temperature. Tempuring chocolate is fairly easy, basically you melt 2/3 of your sugar-free chocolate in the microwave for 45 seconds. Take out and add the rest of the chocolate and mix. DO NOT HEAT AGAIN! The rest of the chocolate will melt and once cooled it will stay hard even at room temperature.


1 packet (200g) Healtheries sugar-free choc chips

1 packet sugar-free marshmallows

1 packet sugar-free fruit jellies

1 handful of chopped peanuts (optional)


Chop up the marshmallows, fruit jellies, and peanuts into small pieces. Put into a medium sized bowl and give them a quick stir to mix them up.

Melt 150g of chocolate in the microwave for 45 sec in a small bowl. Then add the rest of the chocolate into the melted chocolate and stir until melted.

Pour the melted chocolate into the medium sized bowl with the chopped up lollies and peanuts, stir well.

Pour the mixture into a greased and lined baking dish. Smooth out and add extra lollies/marshmallows on top if you like. sprinkle with coconut and leave to set on the bench.

It's important to not freeze or refrigerate this as that will change the chocolate properties and will melt at room temperature.
