Peanut Butter Muffins with Peanut Butter Frosting! PROTEIN

If you're a peanut butter lover like me then these will be too good to stop at just one.

Combining Pics Peanut Butter with LovePBCO Muffin mix is a recipe for deliciousness.

Peanut Butter Muffin Mix Ingredients

1 packet LovePBCO muffin mix

315ml milk of choice (I used Almond Milk)

3 large eggs

2 tbsp powdered peanut butter

2 tbsp of Pics Smooth Peanut Butter

Frosting Ingredients

75g Sugar Free Icing Mix

150g lite Cream Cheese

100g Peanut Smooth Butter

20ml water

Peanut Butter Muffin Directions

Per heat the oven to 160 C.

Place 10 muffin wrappers in a muffin tray and lightly grease with oil (I used coconut oil)

Combine all dry ingredients into a large mixing bowl.

In a separate bowl add the eggs, smooth peanut butter, and milk together and whisk.

Add wet ingredients to the dry mix and gently combine together.

Portion two tablespoons per muffin wrapper.

Bake on the middle shelf for 30 minutes.

After baking let them cool on a cooling rack.

Peanut Butter Frosting Directions

Place all ingredients in a large bowl

Mix using an electric beater for 3-5 minutes until light and fluffy. Add a little more water if it's too thick while beating.

Using a piping bag add the frosting into it and pipe the frosting onto the cooled muffins.

STORAGE – Muffins must be stored in the fridge (1-4°C) for up to 5 days, or frozen (-18°C) for up to 3 months.
